Harvesting agave to make quality mezcal
Mezcal is a traditional Mexican spirit made from the heart of the agave (piña). After several years of growth, the plants are harvested and then slowly cooked in earthen ovens (horno), which gives them their characteristic smoky taste. The hearts are then crushed (molienda), naturally fermented (fermentación), and then distilled (destilación), often using artisanal methods. Each step of the process, influenced by the terroir and local expertise, gives mezcal its unique and complex aromas.
